Concessions Manager
This position is based at the Cross Insurance Arena in the heart of downtown Portland, Maine. Hosting 120+ sporting and entertainment events a year, including 36 home games for our primary ECHL tenant team the Maine Mariners. Our arena’s events and the surrounding restaurants, nightlife, and shopping are sure to provide a true New England experience.
Here at the Cross Insurance Arena the Concessions Manager will report to the Food and Beverage Director and is responsible for the effective management of venue concessions operations including inventory controls, product ordering, training new employees, cash controls, compliance with alcohol service polices, cleaning, safety, guest service, employee/volunteer training and supervision, warehouse oversight, troubleshooting, closing duties, event planning support, food preparation and production, and any other tasks assigned by the DFB. The Concessions Manager must provide a high level of event oversight, technical proficiency and operational/personnel support to ensure the smooth operation of the Arena & Concessions Dept.
The Concessions Manager will actively supervise, coach, counsel, direct, train and mentor employees in meeting company quality standards, and will may initiate or recommend employment actions such as hiring, termination, suspension, discipline, promotion and transfer. The CM will provide oversight and resolution responsibility for employee performance issues. Actively and independently manage all aspects of employee relations to ensure a positive, harmonious, compliant and cooperative work environment.
This is a key position for the effective and profitable operation of the business including large volume sales and large volume ordering. The employee must maintain excellent attendance and be available to work a variable event-driven schedule including evenings and weekends. Flexible availability, professional presentation, outstanding interpersonal skills, self-direction and strong technical (computer and POS) aptitude are required.
This role will pay a yearly salary of $45,100 to $52,900.

Responsibilities
- Responsible for managing, developing and mentoring a staff of part time concessions employees, including initiating employee discipline as required. Responsible for completing documentation of employee performance and attendance issues in accordance with company policy and practice.
- Ensure proper set-up of all concession locations prior to doors. Set-up duties may include: verifying opening inventory, assigning duties to concession workers (employee/volunteer), ensuring sanitation standards are met, verifying that each location is fully operational, ascertaining levels of food production based upon projected guest attendance has been met; assuring that SL or NFP Stand Leader has followed proper procedures for distribution and handling of cash.
- Provide a high level of oversight and operational expertise resulting in the smooth, efficient and profitable execution of events.
- Ability to oversee a large volume of inventory, order product, and manage high volume sales.
- Manage and run all venue concessions operations before, during and after the event. Duties include staff scheduling, employee check-in, equipment inspection, POS monitoring and troubleshooting, guest complaint resolution, training, food production, clean-up, post-event reconciliation and reporting, and any other duties as assigned by the DFB.
- Training new & current employees with regarding to property procedure & best practices.
- Willing to cover / back-up any open position to assure location is fully operational and company standards pertaining to speed of service and guest satisfaction are met; assist with Premium Services operations and event needs, as directed.
- Provide direction and oversight to Concessions Supervisors, Stand Managers, Concession Cooks, and Cashiers. Ensure that all State / Federal, Spectra and IEC policies, procedures and practices are adhered to, including compliance with alcohol distribution / service and food handling / sanitation guidelines, general safety policies and procedures. Report any alcohol service or other compliance issues to DFB immediately.
- Complete post-event evaluations, data compilation, tracking of monetary and product shortages, generating reports; serves as a resource for POS applications and training.
- Ensure work environment is safe and free from harassment or discrimination; immediately address all safety concerns, potential hazards, accidents or incidents. Relay safety/health issues to management immediately.
- Ensure event staff and volunteers are aware of work place expectations; provide on-going assistance, training and mentoring to event staff and volunteers; promote a positive, enthusiastic and cooperative workplace environment by working side-by-side with staff and volunteers; reinforce procedures and practices through repetition; lead by example and provide on-going constructive feedback.
- Ability to obtain working knowledge of all existing concession locations: geographical locations, equipment, evacuation procedures, adjacent employee and guest areas and facility access.
Qualifications
- Associate’s Degree (A.A.) or greater in Culinary Management, Business Management, or related field; along with two or more years’ experience in Concessions Management, other Food & Beverage Management, or related experience.
- 3-5 years’ experience in Concessions Supervision, Food & Beverage Management or related position.
- Solid working knowledge of computer applications: Microsoft office, POS systems, timekeeping system.
- Experience training new employees and volunteers
- Nationally recognized food service sanitation training course certification preferred
- Nationally recognized alcohol service training course certification preferred
- Advanced knowledge of inventory procedures and controls
- Experience ordering product for a high-volume venue or facility
- Ability to communicate with employees, co-workers, volunteers, management staff and guests in a clear, professional and courteous manner which fosters a positive, enthusiastic and cooperative work environment.
- Ability to make sound business/operations decisions (i.e. regarding employee placement, staffing adjustments, and/or respond to technical, product or equipment challenges during an event) quickly and under pressure.

- Possess thorough working knowledge of all applicable sanitation requirements, food preparation guidelines, alcohol service policies, safety standards, etc. pertaining to Spectra and IEC concession operations.

Event Staff - Part Time
Essential Job Functions:
The primary responsibility of this position is guest safety and the security of the Arena with an emphasis on guest service. It is the responsibility of the Event Staff to enforce all rules, regulations and policies of the Cross Insurance Arena. Some of your responsibilities are listed below, but are not limited to the following:
- Wear assigned uniform at all times while on duty.
- Greet guests in a friendly and courteous manner.
- Ability to stand for long periods of time
- Attend to your assigned position during the duration of the event – DO NOT LEAVE UNLESS YOU ARE REPLACED.
- Secure entrance doors, escalators, stairwells, lobbies, and backstage areas.

Changeover/Event Set-up Crew
The Changeover Crew staff member is an on call, per event employee who will work in the areas of room sets and arena conversions at the Cross Insurance Arena in Portland, ME
Responsibilities:
- Must be able to work in a manner that is safe and effective.
- Reliable transportation and current contact information are required.
- Must be able to lift 60 lbs. or more on a regular basis.
- Set-up and tear down including: risers, staging, basketball floor, hockey glass, chairs, tables, pipe and drape and other items as needed for events at the facility.
- Handle folding chairs, stacking chairs, tables of various shapes and sizes, drapery and skirting.
- Perform other duties as assigned.
Requirements:
- High school diploma, GED or equivalent preferred.
- Must pass background check.

Box Office Representative
The Box Office Representative will be able to assist guests with ticket purchases for all events at the Cross Insurance Arena. The hours associated with the position will fluctuate based on games and events.
Responsibilities:
- Accurately sell tickets via the Ticketmaster Host ticketing system
- Welcome each guest in a friendly manner
- Interact will all building staff and guest in a professional manner
- Maintain the policies of the Box Office
- Assist with taking phone orders
- Be knowledgeable of arena layout as well as the setup and pricing for each event
- Correctly provide information to all guests whether in person or over the phone
- Distribute will-call without error to ensure all guests receive the proper tickets
- Process each payment, cash or card, without error
- Balance and reconcile cash drawer at the end of each shift

- Previous customer/guest service experience

Concessions Worker
Overview:
The Concessions Worker prepares and serves concession items to guests. Prepares food and beverage orders to guests at concession stand locations. Ensures quality of food presentation. Utilizes a cash register and accepts payment. Must be able to maintain excellent attendance in accordance with the attendance policy.
Responsibilities:
- Essential Job Functions (including to but not limited to):
- Conduct the cash register sales by taking orders, building orders, and completing the transaction.
- Ability to build orders, prepare food, and knowledge in all areas of concessions operations.

Stand Manager
Overview:
The Stand Manager is responsible for assisting with the overall effective operation of assigned area/level concession locations including food preparation and production, inventory, cash control, total compliance with alcohol service policies, cleaning, safety, guest service, employee/volunteer supervision, and closing duties. The Stand Manager will provide limited oversight of employee performance issues. The focus will be on lending support to the Concession Workers and NPO Members to ensure that all aspects of concessions operations within the assigned sector are fully operational. The majority of the Stand Manager’s time will be spent actively mentoring, training and helping employees and volunteers meet company quality standards, and in promoting a positive, enthusiastic and cooperative work environment.
Responsibilities:
- Responsible for ensuring set-up of assigned concession location prior to doors. Set-up duties include: verifying opening inventory; assigning duties to concession workers (employee/volunteer); ensuring cleanliness and sanitation standards are met; verifying that location is clean and all equipment is operational, and that dispensing equipment has been tested; ascertain levels of food production based upon projected guest attendance has been met; and ensuring that Concession Workers and/or NPO Members have followed proper procedure for distribution and handling of cash.
- Monitor alcohol service throughout event to ensure 100% compliance with venue Alcohol Service policy. Report any alcohol service or compliance issues Director of F&B. Responsible for relaying designated alcohol service cut-off times to assigned locations and enforcing deadline.
- Responsible for ensuring effective operation of location during event: monitors inventory/product levels, anticipates extra stock/product, oversight of employee breaks, sign-in/out sheet, employee meals; ensures designated number of POS are open.
- Responsible for ensuring Concession Works or NPO Members has verified and tracks all product, including transfers, discards/spoilage, and that these are accurately reflected in the closing procedures, ensures that the Concession Works or NPO Members maintained proper product levels while minimizing overproduction.
- Ensure event staff and volunteers are aware of work place expectations; provide on-going assistance and mentoring to event staff and volunteers; promote a positive, enthusiastic and cooperative workplace environment by working side-by-side with staff and volunteers; reinforce procedures and practices through repetition; lead by example and provide on-going constructive feedback.
- Oversee closing of locations in assigned sector; ensure location, equipment and utensils are clean; product is properly stored or returned to Commissary; perishables are refrigerated; ensure Concession Works or NPO Members has properly counted and reconciled cash with inventory; ensure cash has been delivered to Vault. Level Supervisor will authorize final closing of assigned locations when prompted to.
- Responsible for providing limited direct supervision to SMs/CSRs/Concession Cooks/ NPO Volunteers. Able and willing to cover the function of any open position to assure location is fully operational and company standards of speed of service and guest satisfaction are met; hands-on supervision includes the ability and willingness to assist with cleaning, if required.
- Responsible for documenting in writing any problems with concession equipment or needed repairs for assigned locations at the end of the event.
- Must show demonstrated ability to meet the company standard for excellent attendance.
Qualifications:
- At Least 1-2 years’ experience working in a supervisory capacity in a fast-paced restaurant or catering environment or applicable Education.
- Ability to supervise the work of others.

Bartenders
Overview:
The Bartender is responsible for the service of all beverages, both alcoholic and non-alcoholic. They must be personable, professional and able to work in an ever changing fast-paced environment. The employee must maintain excellent communication when it relates to availability. This position is event based – shifts are scheduled by availability and event schedule.
Responsibilities:
- Must demonstrate ability to meet the company standard for excellent in the areas of guest service, interaction with co-workers and uniform standards.
- Follow the bar pre-shift notes and bar menus and provide service as described.
- Serve alcoholic beverages following all proper procedures for serving alcoholic drinks including state/federal regulations pertaining to the distribution of alcohol.
- Responsible to learn or have knowledge of various beer, wine varieties & spirits available, and be able to learn to suggestively upsell products to guests.
- Must pour drinks responsibly in accordance with company standards for serving size.
- Must check guest’s ID in accordance with state/federal regulations to verify minimum age requirement for the purchase of alcoholic beverages.
- Must communicate a cut-off to a guest as required.
- Listening and responding to any customer requests or concerns.
- Bartenders are expected to de-escalate intoxicated guest situations. If a guest becomes confrontational, belligerent, or uses extreme profanity, the bartender may contact management or security as required.
- Contact a management member if he/she is unable to resolve or make a decision beyond the scope of standard decision-making.
- Request additional product or restock product as required
- Ability to handle cash accurately is required. Employee is responsible for issued bank at his/her bar.
- Maintains clean and sanitary work station at all times. Ensures bar equipment is clean & well maintained.

Servers / Ice Lounge Attendants
Overview:
The Server will provide ultimate hospitality for guests in a fast-paced, high-volume environment.
Responsibilities:
- Maintains knowledge of the menu and any special items being offered.
- Provides quick, attentive, friendly and professional service to banquet guests and is able to communicate clearly with all customers.
- Ensures that food items are served at proper temperature and immediately upon availability from the kitchen, as ordered by the customer.
- Ensures neat presentation of all ordered items, with no spill-over.
- Pre-buses tables and full buses tables when necessary, during peak periods.
- Maintains availability to work during many peak periods.
- Stocks beverage station(s) when necessary (ice, juices, glassware, sugar packets, etc).
- Maintains high responsiveness to customer desires and requests.
- Maintains a professional and clean appearance.
- Communicates with wait staff, bus persons, bartenders, supervisors, and kitchen staff in order to improve communication and coordination so that patrons may be impressed by their dining experience.

Cooks
Overview:
Cooks are responsible for preparing menu items utilizing cooking equipment in a fast-paced environment in either concession stands or main kitchen. The Cook must adhere to high food quality standards to ensure guest satisfaction. Portion control, food waste and sanitation are additional areas that the Cook must be aware of while operating in the kitchen.
$15 - $23/hour depending on experience
Responsibilities:
Responsible for cooking and packaging food product which is prepared to order or kept warm until sold.
- Receives verbal orders from the front counter staff for food product requirements for guest orders or if working in main kitchen, food items for stands to sell along with suite orders.
- Responsible for maintaining quality and production standards on all menu items. Food must be fresh and of high quality when served to the guests.
- Responsible for portion control and serving temperatures of all products served in the concession stand.
- Responsible for cleaning, stocking and restocking of workstations and displays.
- Responsible for operating large-volume cooking equipment such as grills, deep-fat fryers and ovens.
- Ensures that all work areas and equipment are clean, food products are properly stored, utensils are clean and put away and floor is swept and mopped at end of shift. The Cook must be checked out before ending the shift by the Floor Supervisor to ensure the concession stand meets cleanliness standards.
- Maintains sanitation, health and safety standards in work areas.
- Must show demonstrated ability to meet the company standard for excellent attendance.
